Irish Cream Liqueur
1 3/4 cup Irish Whiskey
1-14oz. can sweetened condensed milk
1 cup light cream
4 eggs
2 Tbsp. chocolate flavored syrup
2 tsp. instant coffee
1 tsp. vanilla extract
1/2 tsp. almond extract

Combine all ingredients in blender. Blend until smooth. Store tightly covered in refrigerator up to one month. Stir before serving.



Bubble and Squeak
Note: This may sound strange to Americans, but it is loved by the Irish. The bubbling and squeaking in the skillet as it cooks are the sounds of witches and ghosts trying to escape from the fiery heat. It is traditionally served on Halloween night.

3 Tbsp. bacon fat
1 small finely chopped onion
2 cups shredded cabbage (boiled for 15 minutes)
2 cups mashed potatoes

Fry onion in bacon fat over low heat until softened. Add cabbage and stir over low heat for 2 minutes. Fold in mashed potatoes until well blended with cabbage. Press mixture lightly onto the surface of skillet to form a large pancake. Cook for 5 minutes until the underside has browned lightly. Turn and brown second side for 5 minutes.
